Job Description:

Our full service downtown property is seeking an experienced, highly motivated, hands-on Executive Chef who will be actively involved in back line food preparation for catering and banquets. This position will also provide administrative oversight for the culinary team at the DoubleTree by Hilton Albuquerque. The successful candidate, as part of the hotel leadership team, will perform the following functions:

  • Ensure the efficient operation of all restaurant, banquet, and outlet food production
  • Oversee budgetary compliance while ensuring high food quality and presentation
  • Actively engage in menu preparation
  • Standardize recipes to ensure consistency and portion control
  • Hire, train, evaluate, and lead kitchen culinary staff in a professional manner
  • Ensure complete guest satisfaction

As part of the leadership team, this position requires preparation of weekly staff schedules in accordance with budgetary guidelines and business demand, coupled with responsibility for exercising effective loss prevention controls for food and kitchen products. The successful candidate will report to and work closely with the Assistant Food and Beverage Director to ensure the profitable operation and management of the Food and Beverage department as well as building, training, and nurturing an effective team.

Experience and Skills:

  • Thorough working knowledge of hot and cold food preparation.
  • Good working knowledge of accepted sanitation standards and Health Codes.
  • Extensive skill in the usage of slicers, mixers, grinders, food processors, etc.
  • Basic mathematical skills necessary to understand recipes, measurements, requisition amounts and portion sizes.
  • Ability to read, write and understand the English language in order to complete requisitions, read recipes, and communicate with other employees and managers.
  • Sufficient manual dexterity of hands in order to use all kitchen equipment, i.e. knives spoons, spatulas, tongs, slicers, etc.
  • Ability to grasp, lift over head and/or carry 50 lbs maximum, or otherwise, move or push goods on a hand cart/truck weighing a maximum of 350 lbs. On a continuous schedule.
  • Ability to perform duties in confined spaces.
  • Ability to perform duties within extreme temperature ranges and to stand for long periods of time, up to and over eight hours.
